Pikmin, W101, and to an extent Ni-No-Kuni I guess (never played) all did something new, so no.
Out of any of those, TLoU is the only one that really tried to kind of innovate I guess. Although it's really more of the same, just packaged really well.
GTAV is supposed to be excellent but it's not my forte. That said, it didn't do too much new either, aside from GTA Online I guess.
Actually you could say that Beyond: Two Souls tried to lead gaming into the future but it was a massive flop, so.
CoD: Ghosts is just lol. Literally another installment in a yearly franchise that didn't even do anything new for said franchise.

A game is generally not something that can grow, so mature is not a viable descriptor. You can have games with adult themes, but calling it a mature game is ignorant. I'm not aware of any other game that had character switching quite like GTA V, but please inform me if I'm wrong. They just need to make it where character switching isn't forced so much in missions and allow you to complete the mission with whoever you please.
