1. Because it's difficult to fully replicate the huge range of articulation and moves and fighting styles.
2. If they made a game that somehow could mostly replicate real life sword fighting, it wouldn't be much fun
Because in realistic sword fighting you would probably be dead in seconds
Also unless it's literally just Sword Fighting Simulator 2016 it would be be expensive and difficult to implement
