The tracks in 2048 vary between narrow and wide. They aren't just tedious narrow mazes like so many of the least fun tracks from the Pure/Pulse/HD generation.

It'sa feature. In the PS1 games you lose pretty much all speed if you hit a wall, but there is a threshold where you just scrape it and I think it actually boosts you as well. It's a fine line and very satisfying

That margin is actually what seperates wipeout from most other racing games - you can push the craft right to the aboslute limit of the track without penalty but nudge it too far you get fucked. Even HD let you do this (to a lesser degree mind).
Its part of what also seperates wipeout from the likes of F-Zero and other such games. Wipeout plays like motorboats that hover - most other sci-fi racers play like planes without wings. Hence why wipeout craft pitch and yaw more than what other games allow.

In certain parts of the tracks in 2097 there's some slowdown, and it can be distracting. Is this supposed to happen? Would it make a difference if I played XL?

If you look at (say) F-Zero or the obscure Fatal Inertia craft in those games lean sideways to turn, wipeout craft (and like those boats in the webm) rotate on their axis.
Personally it is this design choice that (partly) helped wipeout carve a name for itself as it allows for some very...organic (for want of a better term) gameplay.

Barrel rolls in HD are vitally important if you want to beat the cheating a.i or set seriously fast lap times.
Its (partly) why they let you absorb pickups - to offset the shield penalty for doing a barrel roll.

Ubermall in particular is just constant barrell rolls. Don't know if they really improved the games though, I never really miss them when I play the old games, it's enough trying to slalom around the tracks. HD has a more mellow speed and handling so there's time to do that stuff

I find HD is considerably more forgiving on vertical pitching than the ps1 games. I don't know when this change really occured (probably pulse or pure because lel fusion) but the first 3 games are seriously harsh on you if your don't point your craft up or down on inclines/declines.

My issue with fusiuon is that despite being a fantastic game in its own right it isn't wipeout. Equally though this did mean psygnosis couldn't really mix the series up as people merely wanted wipeout 1 with shinier craft and different tracks. The series really struggled to evolve and deal with some flaws that needed addressing.
Its why HD is seen as so good - its probably the most polished game of the entire series as it does combine the old and new quite well. Shame its still fundamentally pure/pulse: turbo edition.
The money the community would've spent if some ps1 tracks made their return in high def would've been staggering.

They moved it from being a punishment to a boon. If you didn't control pitch you got wrecked, not just a speed reducing bounce, but if you do control it, then you get a smooth landing that prevents the speed loss. If you want to be really good, you'll need to control pitch, but if not you can still play well. It's one of those easy to learn hard to master things.
