Did you play Skyward Sword? That was mainly what I was referring to. The Sky in that game really was almost completely devoid of things to do.
And I can't really agree with the others except Wind Waker. Twilight Princess had a very small amount of grottoes given the size of the world, (and the only one I remember being that interesting was the ice block one) and Majora's Mask was very tightly packed.

The wall merge is honestly fantastic, you don't have to worry about that. It's implemented so that it feels completely natural to do instead of being tacked on. Leads to some neat puzzles as well.

Having all the items encourages exploration and the wall crawling isn't a gimmick when it's so central to the games mechanics. It's also really fun and not broken at all. They really took their time and made the world centered around this ability.

You could add just about anything, so long as it feels meaningful. I always thought it would be really neat to have optional powerful boss monsters randomly wandering about the overworld that you could track down.
I think the main problem is that anything they do add will likely just be simple things that result in you getting items you don't need. Not much point in going out of your way to get stuff if all you're going to get are some rupees you'll never spend, or some random loot that you can maybe use to upgrade an item that's already more than powerful enough for everything you'll ever need it for.

In my opinion, A Link Between Worlds is the best Zelda game since Wind Waker. I loved everything about it.
My 3rd favourite Zelda, and I recommend it immensely.
It's very faithful to ALttP aswell, and doesn't butcher its world.
Tri-Force Heroes is a multiplayer puzzle game, like Four Swords.
