You can "cheese" the taurus demon by dropping from the tower, you get summons for some of the bosses, you can kill that one channeler to make gaping dragon easier, Ceaseless Discharge can be like 3 shotted in a "cheesy" way. Are those really "cheap"? Shouldn't you be using your logic rather than banging your head against the wall till either breaks? I'm hearing a lot of those "you gotta play cautious and smart", but when it comes to ""cheesing"" (beating the smart way) bosses, everyone becomes super indignant. What gives?

Firs take sure you fast roll (<25% equipment load).
Then make sure your weapon is +10 (or +5 if it requires twinkling titanite), you can buy large titanite shards from the giant blacksmith just outside the building where O&S is.
Then during the fight constantly try run away from them and hit ornstein once every time he charges, unless smaugh is too close.

Most of the NPCs in dark souls represent a type of player. Solaire is the player that more or less knows his shit and always has his sign down to carry worse players through the game. Lautrec is the player that would kill an NPC for their weapons or armor. Siegmeyer is the player that never got good and let phantoms carry them through hard bosses and areas and eventually drops the game.

Yes somewhat, as the game runs in 60FPS. You still get identical amount of i-frames at 100AGL and DaS1 fastroll.
Disabling vsync makes it easier in both games. You can do this in DaS1 with DSfix's FPS unlock enabled and limited to 30.

Any souls you gain will count towards soul memory, there is no avoiding it.

All souls you ever gain, whether you keep the to spend or not, go into your total Soul Memory. There is no way to lower this total, though there is a ring that has been added which allows you to stop it from increasing (souls you get go into the ring, not yourself and can't be spent). You can't be matched for co-op or invades with people outside your SM bracket (The ranges are pretty big, and if you want to co-op with specific people, the Engraved Ring lets you meet people attuned to the same channel at increased bracket sizes). Feel free to grind a bit if you need to farm a weapon or get a few more stat points, since you should be able to find people at nearly all levels. Just don't go insane with it early on, or your gear won't be up to par with the people you meet.
The idea behind this system is to prevent what people did in DaSI, which was to reach Anor Londo and beyond at a very low Soul Level and return to early areas with fully upgraded lategame gear to invade hapless newbies.
I think it's a lame system but I don't really feel like debating it now. Hopefully you understand now.

It would still work if the murderer wasn't completly obvious. Yurt was pretty sketchy but no-one suspected that a friendly NPC could be working against you.
Laurtrec was very sketchy, but he didn't do anything permenant. The suspicious Begger in Bloodborne was the most obviously evil guy in any of the games. You find him eating a dude.
If they made someone who seemed innocent and killed people while others were more obvious suspects (have each NPC blame someone else) and only make it obvious to people who can put together the clues.

Gargoyles were fucking easy. I only shat myself when I saw them because I had flashbacks to maneaters. Maneaters were horrifying.
I actually got stuck on Taurus because I didn't think you could block his attacks, coming from Demon's Souls where big things would smash you into the dirt when they attacked.
That rolling shield block animation is the tits though, and they kept it in DS3.
