Dragon's Dogma.
As a big Souls fan I don't think the difficulty of those games makes it a good Berserk type game. Most of the time you feel like you barely survived each encounter when really you should feel like you're totally wrecking things nonstop until you reach a certain type of enemy.
I think warrior in Dragons Dogma is the closest you get to feeling like you can completely obliterate an enemy with the swing of a greatsword.

Played a bit of Dark Souls and it did indeed feel sort of 'tactical'. Lots of blocking, rolling, backstabbing... the atmosphere was great but the gameplay no quite what I'd be looking for, then again maybe the problem is I didn't reach far enough to get a big sword.

Be warned though that you're not exactly Guts tier with the Hugefucksword class,Warrior. Your normal moves are slow as fuck and only your Special moves make you feel like you have the finesse and strength that Guts regularly has. The rest of the classes are all pretty legit for a Berserk feel though.
And the setting+story,combat in general plus the monsters they pit you up against are very well done and could probably fit right into Berserk as a gaiden of sorts.
