Parrying is a bit more difficult and punishing although you will get the hang of it.
Bosses have less health
Might need to use a shield on a few bosses, most can be taken down by two handing and rolling
It has a lot of similarities with Bloodborne but you can't play quite as aggressively.

The issue is more of that DaS isn't about the story. It's mostly about the gameplay, locations, enemies, and atmosphere.
If DaS was about the story, FROM wouldn't have adopted an ambient storytelling style. I don't know why you would brush over a game just because you know the "lore" behind it. You're only doing a disservice to yourself.

Dark Souls is a little slower paced. It's more survival than action. There are a ton more stats to balance and more items. For example, weight of your gear decides how fast you roll (equivalent of BB dodging). The customization is ten times better. No trick weapons.
Other than that they're extremely similar.

1 is you are a chosen undead, in a land of undead, to basically get so strong you replace the current guy who is keeping the first flame going. you can either sacrifice yourself at the end to reignite it and keep the gods in power, or you can walk away and let it fade out, ushering in a new age of humanity. Manus, the first human, was the first owner of the dark soul. Dark souls are humanity itself
2 you are the cursed undead, and the main point that is established is humanity itself isn't cursed, it's the land itself. kingdoms rise and fall on the same exact spot, reborn again and again, just like a human would. It's a cycle with the first flame - it reignites, extinguishes, over and over. It means either ending in 1 is canon because it will happen eventually at some point. Lordsouls are reincarnated into new individuals each "cycle". Manus is reincarnated into various shards - each shard takes the form of a specific individual in 1, and is a "queen" to the current chosen undead. Not all shards are evil.
3, without spoiling too much, is about another "cycle" in the future. you return to some locations in 1, so playing at least 1 would be beneficial to get the full experience out of it. 2 is an okay game, it's not as amazing as the first but it's still better than 90% of the shit put out nowadays. I'm sure DLC will elaborate on the Manus/das2 plots, while the vanilla Das3 is directly related to 1
