DQ1 aged perfectly, mostly because it is so simple. You can beat it in an afternoon; not even enough time for its flaws to really show themselves. It's the JRPG snack for when you're not hungry enough for a full meal.

The game has bugs but nothing that you'd even notice without looking them up. The spells that don't work is shitty, but they're mostly buffs and debuffs, which you don't use in most FF games too. Aside from the game being too slow, I think it aged pretty well.

I disagree. I don't think having fixed jobs is better or worse than having class changes, it's just different. It's like how some RPGs let you pick your character's class at the beginning of the game (Mostly WRPGs) but here it's for your whole party which is pretty unique. It's a different kind of replayability. You know how some people might talk about games like Diablo or Dragon Age and discuss how different their playthroughs were because of their class, it's similar to that, and I don't think Diablo or Dragon Age or any game like that is automatically better if you add class change. I think a lot of people enjoy classes being fixed and you get the same kind of discussion on jobs to pick or challenge runs (Like four white mages). Or sometimes a part of the game is easier with a certain class, but another part is harder with that class, and with class change that's completely negated. Some people like the commitment that comes with fixed classes. In fact, I'd really like a modern FF that used the FF1 job system but with more jobs available at the beginning.
As for FF3, in my opinion the real comparison to be made with is FF5 because they both use job changes but in my opinion FF5 blows it out of the water. The whole point of job changes is to let the player customize his party how he wants, but FF3 rarely lets you do that:
1. You can't use abilities you've learned from other jobs
2. Changing job lowers your stats for a few battles
3. Multiple dungeons and bosses are designed to make you use certain jobs (Magic jobs when you're tiny, Geomancer for the tree dungeon, Dragoon for a certain boss, etc.)
4. Classes are unbalanced, endgame classes are way better than early ones
Combine all of these and you end up with a game where everyone is using the same jobs in the same dungeons because the game doesn't actually let you customize and use what you like, unlike FF5.

Protag was meh - but I liked ti that way, he was essentially just a throw away foil for Vivi and Garnet's story - the narrative is really about those two more than anything.
FF9 is my personal favorite of the entire franchise - can't explain exactly why but the story was definitely one of the stronger aspects (compared to other FF's) - It was essentially two, Garnet's rebelling against her duty as royalty, and Vivi's trying to grasp his existence - what it meant to be who it was - what it meant to "be" and the conflicts therein.
Zidane (IIRC) had no real story other than pseudo love interest to Garnet.
