I would give my firstborn for a good fantasy game with dorfy dorfs in it, but for some reason, people prefer elves in any game there is.
Zelda is full of pointy eared fair skinned people called Hyrulians.
Morrowind has 3 (technically 5) types of elves, but no dwarfs in the typical sense of "axe wielding, beardy, shortstacked alcoholics that like to fight".
Maybe the first Dragon Age could count, since you can be a dwarf there, but aside from that? It looks grim for dwarves in games...

Part of the appeal, in my opinion, comes from the fact that they're a stark contrast to elves.

clean faces vs scars and beards
nature vs forges and smithing
etc.
Also, certain fantasy settings like Tolkien's presentation of dwarves, the Warhammer world and others have helped portray them as an interesting race that is represented in fanart, books, games and what not.
They're just an interesting idea, like elves, goblins, orcs and or general fantasy concepts like wizards and paladins.
