I play games on a 5:4 monitor, 1280x1024, lowering the resolution to 1280x720 if the game really is better at 16:9.

Actually its the other way around because Phones have smaller screens.
If we're talking about a 5" screen (average smartphone) anything higher than 1080p, like 4k for example, wont make much of a difference because the higher DPI will go the smaller the difference will be.
But when we have a big monitor like 24" (average monitor) a difference between 1080p and something higher, like 4k, will make a huge difference.
