Sims actually do fairly well on Mac and Linux, they're played by older people who tend to enjoy those systems.
When you look at the Mac App Store you'll see games like X-Com and Civilization selling well.

RCTW has been in development hell for the past 2-3 years, went through 3 devs, had a shitty early access, not much improvement since then. Atari, strapped for cash and wanting to be relevant again, is trying to rush this thing out.
Graphics look WORSE than RCT3 somehow... and RCT3 is almost 12 years old now. Glitches galore and the park size for the sandbox in the game is VERY small.
Meanwhile, Planet Coaster is being developed by the same studio that did RCT3 (Frontier), looks good, is in Alpha right now, and seriously looks like a better RCT3.
So back to my analogy, RCTW is just banking on nostalgia and brand equity for sales (much akin to SimCity 5) to a game that is a pile of shit compared to it's predecessors. Meanwhile, Cities: Skylines was a labor of love by the devs and is a great game.
