Just try any kid of themed build. I did a Holy Blade Ludwig run, using the Chester Set, Pharis's Hat, Left handing a light Crossbow, and Right Handing a Sunlight Straightsword and Moonlight Blade. Pretty fun

2-hand washing pole, level dex to 40 and faith to 30 for WotG + buffs.
Increase STR to 20 if you want to one-hand, or 27 if you want to maximize damage while 2-handing it.
Level up END and VIT a little, but don't prioritize them.
If you really want to have fun, get the black cleric set and pretend your sephiroth.
Battle cleric, Morningstar and Robes torso are a must. No Wrath of the Gods
