Make sure you have high agility and don't fight on low fatigue. It's hard enough to hit something with marksman weapons even while at full fatigue. If you want to do something a little different and lore-breaking maybe try to use a mod that adds in a hunting rifle. Shit's fun tbqh famalam.

Granted, Morrowind doesn't do this right either, but with Skyrim it FEELS like it should work. It feels like you should be able to pick people off like that unseen, and it feels like you should be able to take someone down with an arrow or two. However if you don't have some major sneak damage perks, you aren't even going to 1hit the first guy and then all the rest will see you. It just gives a false sense of power as a stealth archer.
As for Morrowind, like with most things, you'll want to use more magic eventually. Illusion works well. I'd say in Morrowind you have to transition later to a combat archer-mage. It'd be more of an experience where you use sneak for thieving and such than combat until you get illusion magic to help you. However at very long ranges, sneak archery should let you get kills without alerting the 10 other bandits nearby
