Not linux, but Lunatic Rave 2 supports community made pop'n charts. reddit has a decent guide on setting things up.
If you absolutely have to have the real thing, look into the PS2 games with a proper controller - afaik DJDAO is the only brand still making them.
If the older games still aren't enough, you'll have to start doing some digging.

You have 3 options. One is going to trigger bemani people.
1. DJ Max Trilogy - The PC release that is pretty much a compilation of everything from 1 to around Black square. It was unpiratable for a good while due the games mandatory USB dongle security but somehow it was cracked. Probably your best bet right now if you can find it on a public tracker.
2. Lunatic Rave 2 + DJ MaxBMS's + a DJ Max Skin. There's a guide somewhere on pastebin.
3.osu!mania with a djmax skinIt's the easiest to get into but the quality of charts are all over the place. Only try this if the other 2 options aren't available.

outside of Japan, yes. Not that they took American arcades very seriously to begin with: The X series were produced largely to fuel their legal battle against RoXor and their clone, ITG, and the cabs themselves were very shoddily made.
In Japan, the series has been just fine. The community got better, and so they make the next game with harder songs. Repeat for a decade.

Torrenting DJMAX Trilogy is a good start, then. It has a wide variety of Korean music with an equally wide variety of difficulty options. The only real issue is that most of the content is locked behind a grind wall, but there should be a 100% save floating around somewhere.
Alternatively, you could go the Stepmania route, but then you have to go through the trouble of finding song packs that are not shit and that you can play.
Osu is by far the most flexible rhythm game client, but is 90% anime OPs. Both Standard and Mania are good game modes, but as with Stepmania you'd need to be willing to dig for good songs.

If that's a shot from your actual arcade, what is it? Looks cozy, I have a local arcade with bemani games but it's in a big bright mall location (it doesn't even have arcade carpets!) so it doesn't quite have that arcade feel.

Music choice of course is subjective, I found the entire songlist with the exception of all night long and fantis-K or whatever to be totally dull and vapid.
The note system was needlessly complicated with stick presses, though everything "Could" be substituted with touchscreen presses. The touchscreen wasn't nearly as responsive as technika's was, so "Could" remained a theroy.
In addition, the notecharts went from easyeasy, to kinda tough, to satan's vibrator. The difficulty spike was steep, without rewarding gameplay to justify expending the effort.
Persona dancing all night doesn't appeal to me either as i don't like persona, and there's nothing that really grabs me on the songlist. It all seems to be light pop to jazz. None of which i like.
Project Diva X is coming out for PS4 in fall, and it came out for Vita on thursday of last week.
Project Diva Future Tone has been split into two games, Future Sound, which is mainly the sony console songs(Tengaku, World is mine, Sadistic music factory) and Colorful Tone which is mainly the arcade and 3DS songs(Like the wind, Commonplace world domination, Snowman, Mellow yellow, Black gold) Each game with have 100ish songs, the full songlist will be somewhere around 220ish. They said they will be "Bargain priced" which is usually around 3400 yen.
How popular is DDR in Japan these days compared to other rhythm games like IIDX, SDVX, and Jubeat? Been out of the loop.

Cytus and Deemo are good if you're on Android. No calibration on ios = garbage.
Dynamix has decent gameplay but a 7/10 soundtrack.
Same with Rhythm Control: Good game, meh soundtrack.
Musync is a newer one, simpler but carried by a good soundtrack and gets kinda-sorta hard.

the first and only time i went to dave and busters, we made the mistake of eating food, shit was cold, soggy fried shit that no one would want to eat before spending an hour moving around at an arcade.

Down side, their ddr machine was ON but out of order, and literally everything else they had there was phone games you pay for chances to play on, time crisis shit i've played a million times (with the exception of time crisis 5, i didn't even know there was a 5), shitty electronic rigged ticket machines and those basket ball hoop games to make the nig nogs happy. They also had guitar hero arcade which is literally just "pay a dollar to play one fucking song on guitar hero 3", but their in house music was so fucking loud you couldn't hear the game. even if DDR were working, i wouldn't have been able to play properly.

DDR went to shit after DDR8 Xtreme. Supanova was such a clusterfuck of bad detection and timings.
