Because in a time where the market was flooded with generic fantasy RPGs, Earthbound came out and did it'd own thing. It was unique, it had style, and it got surprisingly deep. Honestly, there's no wonder why it's so memorable

Unique atmosphere and setting that's been replicated endlessly after it but never really trumped in my opinion.
Of all the games that are about a boy going on an adventure to save the world, this is probably the best mix of down-to-earth and bizarre.
Essentially the game is great for escapism. Not everyone can get into that so I won't recommend it to /anyone/ but I'd certainly recommend it to RPG fans.
On a related note: Mother 3
The sequel to Earthbound, in many ways, is a tone-shift from its predecessor.
If someone asked me to recommend an RPG and I knew they haven't tried this series, I'd probably ask whether they prefer Comedy or Tragedy to decide which of these games to recommend. Mother 3 is a tragedy, one that many people shed their first vidya tear to, and one that takes advantage of some of the best strengths of the video game medium for story-telling.
So if you're interested then give one of these a shot, whether it be the charming interpretation of 90s America through the eyes of a middle-aged Japanese man who never went there, or the wild ride with an ungraspable form known as Mother 3
