Ultimately, though, OP didn't give us enough information.
How much HP do we have? How hard do enemies hit? How much HP do enemies have? Can we stagger them?
If an enemy has less than 50hp then yeah there's no point to get anything except the normal sword. But enemies with larger HP pools would die faster with poison on if it stacked more than 5 times. Additionally, if enemies had only 30HP it might be wise to take the Crit Sword because you have a 50% chance to one shot the enemy. But if the enemies hit really hard, and stagger you, then the Heal sword might be good.

I interpreted the stacking as it would add another 5s effect on top of the others, not that it would increase the damage and refresh the duration.

You'll just have multiple 5 sec poison DOTs, not a single 5 sec poison DOT that refreshes with increased damage every time.
That's not a two-handed only sword right? If it's one-handable then take the Healing Sword and go Tank Master Race.
