To me its more then the muh feels factor, but im also not a lying assfuck so yeah its a bit of it.
1. a giant wolf with a giant sword, not some furry faggot from dust with a big sword but an actual freaking wolf that uses the sword in his mouth
2. the music is pretty good and kinda fits the whole thing and the place where you fight him is very pretty in contrast to where you fight most other bosses.
3. i feel that most games wouldnt have changed the interaction with a boss post dlc, but the cutscene change if you do the dlc first was a cool unexpected thing.
Artorias is probably the first I can think of. Not really exploitable, but not riddled with bullshit mechanics. Can dodge all of his attacks with decent reactions and even prevent him from powering up.
I recently beat DS1 for the first time and I have to say I actually think my favorite fight was Seathe. It was the most unique fight in the entire game and I never see people give it any props. Second favorite is probably Artorias.

my first time around, and I thought they were pretty difficult, at least hyper ornstein. I had to kill ornstein first and range/pillar out smough because I couldn't beat the alternative.
incredible boss battle though, unlike anything else I've ever played
bell gargoyles are pretty fun, capra demon was pretty fun, quelaag was stupid easy, moonlight butterfly was pretty easy in hindsight, taurus demon was a good learning experience.
that's as far as I've gotten though, top 10 game.
They were all pretty great :)
