The story and characterizations are unchanged, the translation is by the book. All that differs is an attempt to make it take place in America instead of Japan, which is of no consequence to how the characters act, the plot, or even gameplay (any logic involved with solving the cases). It really doesn't matter, but if it does bother you, it's a simply matter to substitute 'burger' for 'noodles' and 'America' for 'Japan' in your head.
