Because the East still takes pride in their animation. Here in the west we gave up a long time ago. They hold animation in high esteem while we think it's just for children. Steven universe and other animated shows from the West use like 10 colors total per episode, which is part of the reason they look so shitty.

I mean I'm not an artist so I can't say one way or the other. I like the attention to detail and the little things that are added, because to me it makes it seem like the animators are taking more pride in their work and showing they care about the animation.

The anime is kind of shit.
The novels are better because you get the most interesting part of Overlord: the silly character interactions and Ainz having to make up enough bullshit to make everyone believe he is the ultimate evil mastermind.
