Part of the appeal of Jojo was the continuity, since it was this huge continuous story spanning several in-story and real life decades. There were characters that debuted in fucking 1987 still showing up. Getting to seePolnareff in Part 5orhow far Jotaro has gotten by the end of Part 6really made the series for me.
Then suddenly, all that goes out the window. I love Part 7 as much as everyone else, but I honestly wish there wasn't a hard reset after 6.

Araki's publishers told him to end JoJo and start a new series because Stone Ocean wasn't doing well in Japan at all. So that's what he did.
Then he started a series that wasn't JoJo. It was called Steel Ball Run. It had references to JoJo characters through name, but that's it. Then he revealed twenty or so chapters in that surprise, it's actually JoJo Part 7, fuck you publishers. Everyone loved it, and the publishers had no choice but to let him continue. That's why SBR doesn't say "JoJo's Bizarre Adventure" on it until later chapters.

The novel about Jonathan's son as others have said is mostly canon and relevant(and events from it are referenced in Part II as well as it explains why Lisa Lisa couldn't be couldn't be with Joseph growing up). George the second isn't irrelevant at all in the grand scheme of things. That's just the stylistic choice Araki made when he was originally writing that part of the manga. Things outside the main story have been more fleshed out over the past 30 years.
As for Jotaro's father it's actually explained why he isn't around and it's not about him because he's not a Joestar. Jotaro's father is not his a Joestar. His mother is.

I thought that Jojo was about some guy named Jojo who looked like Ken from Fist of the North Star and wore Jotaro's clothes looking for someone named Dio for whatever reason.He went around a desert type planet (similar to Trigun) which was actually part of another world and "Bizarre" things would happen to him on his hunt for Dio, who could stop time.
It was interesting seeing Part 1 be about a stone mask in the 1800's.

Part 5 is inevitable, I wouldn't be surprised if it got a PHF OVA alongside it too. Part 6 is despised in Japan and while SBR and JJL are liked, they're not so beloved that the Japanes will be clamoring for them. Disagree. Hamon was pretty good and a nice take on a vampire weakness. I am, however, glad it stopped being used after part 2 because after Joseph and Caesar's individual "tricks" with their hamon I don't see how it could have kept being interesting without some asspull extra rules for what was possible with hamon to allow the stakes to be upped.
Stands at least mean Araki can come up with a new and arbitrary power and then see what interesting ways this power can be applied.

there's also part when he has that stand growing on his arm where he tries to use hamon to burn it off but can't because the stand is technically part of his body at that point.
(It's mentioned near the end of part 2 that normally hamon doesn't do much to people but a strong enough hit of it can cause burning and skin issues, sunburning and similar, as if you'd had an 'overdose' of sunlight.

Even still, it feels like a wasted opportunity. Just because he's the mentor character doesn't mean he has to hold back and not use the techniques he's known for. In DiU, Jotaro served the same role, but he also fought to his full capabilities. He used Star Platinum and it was still stronger and tougher than anyone elses Stand, he froze time and he while he may have helped Josuke and Josuke was still clearly the protagonist, Jotaro still got enough screentime to feel well developed and a part of the crew.

From what I heard, Araki's publishers thought that SDC needed a female character for variety so he had to add her in. He had no interest in bringing her back because he didn't want her there in the first place.
