How come we don't consider UFC/Boxing games as fighting games?
They balanced, have RPS mechanics. footsies, combos, a lifebar system and serve as a great alternative to those who do not want to have a lot of unrealistic flashy moves or super anime style graphics.
These games check most if not all the boxes of what is a fighting game yet are ignored

Was a red belt and won 90% of my matches but it's not a fighting game because there is flash knockouts,The ground/sub game can be played like an absolute faggot (Just like real life) and a multitude of other things like fighters being imbalanced

Boxing/Wrestling/MMA games are not made with balance in mind.
It's in that category with most sports games where sports people really like them because they're trying to emulate the sports they're based on as much as possible but gamers tend to not really care for them because they're more concerned with emulating the sports they're based on than being good games.
Like if you wanted to design a good video game about two people fighting each other you'd never design it like a UFC video game. UFC games are designed the way they are not because it makes sense to design a game that way but because it's trying to copy the sport as much as it can. Not that it makes it an inherently bad game but it's more concerned with simulation than good game design.
I feel the same way about the Plastic Instrument rhythm games. If you were just designing a rhythm game you would never do it in the way those games do. They're more concerned with trying to be superficially like playing a guitar than a good rhythm game. Again, not that it makes them automatically bad, but trying to make it work sorta like a guitar is a limitation on making the best game they could.
I think that's why most of the time you don't see a huge cross-over between gamers(forgive the term) and people that play sport games, simulation racing/flight/train games etc. They have different priorities.

I think they are "fighting games", in the broad umbrella sense of the word. So is J-Stars Victory Vs, Gang Beasts, DB: Xenoverse, Digimon World Rumble, etc.
I think everyone who isn't a pedantic asshole (read: /v/) recognizes these are all "fighting games", but that doesn't make them all GOOD fighting games, or fighting games that have the aspects that appeal to the core audience. Which is why they get cast aside and forgotten.

That kick rarely ever lands because of the ridiculous spin and travel time. You have to predict where your opponents head will be and catch them off guard for it to land, but it has a lot of power behind it so if it does land it's usually a ko/tko.

I remember when playing the first UFC game, undisputed 09 I think, and I went from 0-9 to 54-11 in a couple of days because I started being a faggot on the ground. I would always play as Forrest Griffin and at the start of every match I would clinch and then pull them down into full guard. Then transition to rubber guard and from there they were usually fucked. I'd either submit them or end up in mount and fuck them up.
