DKC water levels are better in every way though just because of the music/artstyle alone.
Don't know about DKC, but I do remember having a lot of fun with the water levels of Rayman Origins and Legends.

The water levels made me drop Tropical Freeze. I liked the first three worlds but the water levels tired me out and I never picked it up again.
the giant octopus water level in tropical freeze, in hard mode, is the hardest level I have ever played.
Much harder than anything in Dark Souls, and harder than the Champions Road with no power ups. Kind of like beating Death in Castlevania without holy water cheesing.
