During phase 1, up to 3 Abyss Watcher can be active at once. The "Boss" is one of them and has more health than the others, and the other two are weaker mobs. They'll switch between fighting each other and fighting you. In 2 they made parry not instant like in the first game. The first few frames of the animation are wind-up before the active frames kick in. That completely messed up my timing, because as you said, yeah, it made parrying more of a guessing game. I'm used to parrying, blocking, dodging at the last split second.
