I love Earthworm Jim as much as anyone but I can recognize that the games were a mixed bag and quite a clusterfuck. It's kind of the fun of the games, just watch how crazy the devs went with their ideas, but a lot of levels would fall flat and would become real annoying, specially if you were replaying them and just really wanted to skip them.
So I'm not saying the games aren't good, of course they are, I love them, but I wouldn't present them in any way as a gold standard for platformers.
If you want some really, really good platformers I'd say something like Mischief Makers or Rocket Knight Adventures.

I don't disagree with you. Yu Suzuki to me is the gold standard of what game devs should be, if anyone can pull it off it's him. But still I'm not sure anyone can pull off such an ambitious project with a couple of measly kickstarter bucks. I know that 6 million is a lot of money, but really for AAA game development it really isn't. And I want AAA quality out of this, I don't want a quirky small contained indie game, I want a proper Shenmue sequel. Model 2 isn't open source but Model 3 is, kind of weird we haven't seen a libretro port yet considering the obscure stuff it gets ported over there.
It's kind of a shitty buggy emulator though, but it works well for Daytona USA 2 and Scud Race, which is the important part.

The RA core for reicast takes half a second to setup (compared to the folder placing tap dance you have to do for nullDC) and it runs on Linux.
Compatibility wise its just as good, and it's actually under active development.
