Sunshine and WW have my favorite settings in any game. Sunshine moreso because they played with the idea well with each part of the island you went to.

Probably to show off the GC capabilities of creating far bigger worlds compared to the N64 and without fog.
Oceans work better I assume considering you don't have to render trees and grass compared to forests and deserts are generally boring and have a less adventurous feeling.
