The first game is one of the most batshit things I've seen, not just played, even not counting the pedophile and cannibal allies you get.
The second game' plot and story suffered a lot, but at least the mechanics were muchly improved.
I recently finished only the second game, I'm about to start the third game and I'm hearing it's more akin to the first one than the second regardless of it being a prequel.

Roll around them, the games do have a weird difficulty spikes at times, especially with magic immune enemies and shitload of HP.
Maybe single them out, get a knockback weapon and just keeping wailing at him one by one.

Make sure you get good combos, as getting certain amounts of hits in a row spawns health. Also, when you're doing a combo, and your sword glows and makes a ringing sound, you can press triangle to do an AOE attack around you
