That's the Souls series for ya man. I beat all of BB bosses on my first try except Shadows of Yharnam which was a trial of itself for awhile, that and Defiled Watch Dog and Headless Bloodletting Beast, those two, especially HBB was an outright mess.
Someone people just have problems with different bosses in the series.

Stay in the water, only swing once, you wont get anymore hits than that usually on him. There are areas on the beach that look small but you can clip into them and it stops dodge progress or fucks up the i-frames on it.
Also just Mergo's Loft: Middle, run through all the enemies, back to the dream, buy some vials. You'll be capped in no time, make sure to pig up the 2-4 vials from the 3 pigs too, and lure them to the Shadows, they kill each, and all Moon runes so you can just but tons of echoes, far faster than farming them off drops.

Souls games selling point was never about difficulty. Casuals and Reviewers meme up the difficulty like it's the fucking selling point of the game when it's not. Sure it isn't an easy game but the difficulty is moderate. The selling point is that Souls games are currently the best adventure RPG's in existence right now.

Amygdala is easy as piss, just fuck up her arms with charge attacks and she gets staggered every 5 seconds. The hardest part about that fight is handling the single digit fps when she bleeds all over the screen.
Marie was fucking impossible. Her parry attack can one shot you even at 40 vit, and it's very difficult to telegraph.

I never saw why people complain about Amgydala, especially Defiled Amgydala personally. I found Defiled so much easier because it's just circle strafing to the left on the outside of the arena and running in when it ground pounds and back out.
Maria I found to be relatively easy myself, like most of the Hunters, for whatever reason. Same with Gehrman and shit, who got stunlocked and downed in like 20 seconds.
Now the Charred Hunter in the Chalice Dungeons, isn't hard to stunlock, but the FPS drop during their fire hit me harder than Maria's or Amgydala's cosmic bleed shit. Like it felt worse than Blighttown FPS drop on PS3.

I had no problem whatsoever with O&S which was a disappointment, still a fantastic boss, but Seathe and Firesage Demon presumably two of the easiest bosses rekt my shit constantly, along with Quelaag. Which was kind of sad since I knew what to do with all of them I just kept dying to stupid shit, especially to Quelaag, Seathe I managed to finally get behind the tails and kill, and Firesage Demon, I just couldn't fight him at all in that hallway, eventually just did jumping attacks to his belly and killed him that way.
