Because they're cute feel good games that are pretty strong mechanically even if they tend to play things safe and are easy as hell.
It's not so much that everyone adores the series and more that it's really hard to hate. There's nothing wrong with Kirby games so there's no reason to form strong negative feelings for it.

Kirby stays true to its roots without introducing garbage gimmicks that nobody likes.
