As an Unkindled, it's implied that your powerlevel is so weak that you can't even hollow properly -- whatever special Bell fuckery that took place to revive you also keeps your humanity buttoned up so tight that you don't hollow upon death. Really, youre more of an animated Ash Golem thats powered by the Darksign and a shred ot humanity, than anything else.
The process of "unlocking your true strength" merely supercharges your humanity enough to allow hollowing in the first place. I believe that the Dark Brand description states that it's nothing more than a Darksign that's literally overflowing with Humanity/ the Abyss

So from what I understand, the cycle has been broken and the first flame is dying out. The unkindled are the people coming back to life, but hollows still exist.
However, you're not a hollow, and the new hollowing mechanic is you regaining your power by using an ember.
So is hollowing now something completely different gameplay wise?

While the natural course of events is:

You are indeed undead in DaS3, but you're a sort of artificially created, Undead-Lite (now with 200% less power! Wow, what a bargain!). For whatever reason, you cannot hollow, but this also places severe limiters on you powerlevel

So, did people finally learn to control the Curse?
I mean, you have the Darksign, so you're accursed, destined to lose your mind and hollow on day.
But you dont, you can die as many times as you want, without ever hollowing. Hell, to even be capable of hollowing, you have to volunteer to fill yourself with excess Darkness.
In addition, I don't think that you were cursed with Undeath like others. I mean, you've been lying in your grave, dead, for multiple cycles -- even if you were once undead in your grave, linking the Flame should have lifted the curse, and you would have died peacefully forever. Something revived you, and placed the Curse on you in the process -- or at least, some altered version of it, since you cannot hollow.
Is this what Aldia and the Bearer of the Curse ended up making?
For DS1 if I'm pumping points into strength should I just use weapons with high strength scaling?
If I enchant weapons don't I loose that or some the fire/magic damage etc outweigh the scaling bonus'?

If you make your weapon Magic or Enchanted, you sacrifice your STR scaling and physical damage, and replace it with INT scaling and magic damage.
