So these games seem like they might be fun. Is there any in particular that would be better to start with?
Start with 4 I guess. 1 and 2 have re-makes but people are divided over them and are either butt-blasted in the extreme or filthy casuals that think they're hardcore while secretly playing on casual mode. Dunno if it's worth it at this point to play the OG 1 and 2. 3 should still hold up just fine after playing 4.
The problem with these games is you are stuck with a party of the same class throughout the entire game unless you grind for more. I never managed to finish a single one of them

OP, you should try the demos if you're curious, since you can transfer your save. Untold 1 and 2 only have story mode demos available, but there is a classic mode included.

EO:4 was a blast, and the first for me in this genre, but I couldn't get myself to pick up another one like it

You do know you can change classes if you don't want to add more people to the party.
Also changing tactics is easy since you can reset skills.
