I don't think you're giving FFV enough credit.
In addition to the fun job system, it has great dungeon and boss design, and most of all an amazing pace.
There's no part that goes on for too long, and you get to see a huge amount of varied locales all throughout the game.
I think it takes the best facets of both Final Fantasy and Dragon Quest series

but even then IX is often too slow. Rather, it doesn't change things very much.

Generally agree.
VI was too easy and short, you're right in a sense that its overrated by Nintendofans, but if you played it back then it probably had more impact. Chrono Trigger was more memorable but suffers similar problems.
VIII has fun characters, you don't have to like the hero. I think the Junction had a lot of potential but was wasted.
FFX had so much to do especially in the international version, I think Tidus was much more annoying than Squall ever was.
Crisis Core was also fairly decent.
