Moon Presence doesn't have an active motive. He's perfectly happy with his surrogate.
The only reason you kill him is because he is the entire reason the hunt (the dream) and the beast plague (red moon) persist. Paleblood refers to the sky that looks like "a body drained of blood" during the red moon, which is also noted in the Laurence note. By killing MP, you stop the endless cycle of beasts and hunters. That's what it meant by "transcend the hunt", you don't just stop one night of the hunt, but stop the cycle. However, the only way you can feasibly kill him and not get possessed was to become a great one, which is why you needed the cords.

Cainhurst still suffered from beasts, it's just that the blood they imbibed was from Queen Yharnam and was teeming with vermin. It's possible that instead of lychanthropy, the vermin caused people to transform into bloodlickers (and the heavy usage allowed the women of Cainhurst to become "ghosts"*).
It allowed Annalise to achieve immortality, and Maria to attain mastery of blood magic.
Basically, the church didn't want such powerful stuff falling in the wrong hands.
Why they didn't research it themselves instead of just forbidding it, I don't know.
*My personal head canon is that the "ghosts" have imbibed enough forbidden blood to survive death, but not enough to achieve immortality like Annalise.

You can pick a backstory where you're a dainty little prissyboy. You coming into Yharnam with the martial skill to fight giant monsters is just as valid a backstory as you coming in Yharnam having never fired a gun in your life. Your character could totally have been an average person with no combat training because it doesn't matter.
No amount of training justifies being able to kill giant dragons and shit in any Souls game (even the excuse that you come in after everything is fucked and in decline only goes so far) but you can still do it anyway because guess what videogame. Even the backgrounds with the most combat implied combat experience ranges from "you could have been a shitty bandit" to "you were the bandit god king". The backstory for your characters matters fuck all which is the entire point.
You go in as some guy and end up killing everything left alive in X location. Whether you were a knight or a wizard or a baker matters fuck all and are all equally valid. The closest you ever get to the player character background mattering is BB where you're actively seeking Paleblood and got a summons to vampire town before the start of the game and even then the end result is still "whatever your background was before you started the game doesn't matter".
