I tried this game on PS3 and it was clunky and barren. The pawns didn't seem to be useful at all in battle and I couldn't really get into the "climb monster" mechanic.

If you look at it like that, I suppose you have a case. I see it from the angle that at least two of my fingers on each hand have to be used to hold the controller, if I want to use the XYAB (or shapes, whatever) or the D-pad, I have to take my thumb off of the stick. Mouse and keyboard lets me have more fingers for more buttons so I don't have to take stop using anything to hit something else.
It makes sense to me, sorry if my explanation is weird. And my saying that controllers are uncomfortable is just my opinion, I'm not saying they're objectively uncomfortable.

I made a Mystic Knight for a change since all my previous characters have been the Yellow classes.
I read up and found out that levelling both Sorcerer and Mage to max is pretty much essential for Magic Knight to be useful otherwise you do fuck-all damage without the Mage and Sorcer Augments. Is this true? Should I just reroll or is it actually worth levelling the other classes to max? I remember when I played assassin all the way to level 150 I didn't do any of this shit.

That's a bunch of crap. Going pure sorcerer all the way to 100 would get you 500 mgk. Going mystic knight 10-100 gets you 300 mgk.
End-game weapons give you over a thousand mgk. You're talking about completely ruining your game experience for a 200 point difference, which will literally amount to killing massive enemies 1 second faster.
