When you make potions in games that allows you to do so, there's never any sweet components involved. It's either a mixture of herbs or some sort, which means it will either be very earthy, or kind of bitter.
I'd like to think potions taste absolutely horrible, as if to warrant their use means being in an absolutely critical situation

It's probably some truly awful shit. Likely not "rotten" or disgusting in that sort of way, but in a chemical fashion. A good alcohol burn if it's used as a base like it is in Witcher.

Bread doesn't taste like any of that though (maybe slightly like salt). That is because it's baked. Potions are brewed, so they would taste different from its ingredients.
