I might just like different pacing in games than you. With story driven RPGs I like a slow start because it makes the tougher enemies and dungeons feel more meaningful later on and adds a general sense of progression.
I also just like filling out the compendium and trying to get all my favourite purseowners as soon as possible.

When I say slower, I mean like loading screens. There are virtually none in P3P.
Also the inventory system is shit in Fes, but in P3P, they made it the one from P4, meaning you don't have to go to the dungeon to change gear.
Also, instead of walking around the city or school, it's an overhead view with a circle to select things making it easier to find things and talk to people.
Also it has all the bonus persona's from Fes and the dungeon from Fes as a bonus hard dungeon.
I just can't think of any reason to play Fes over it.

I ordered an IDE HDD for my fat softmodded PS2 so I could play games on it, how does it work though? Do you just need to run the ESR patcher on ISO's and you're good to drop them on the drive and run them? How's the compatibility compared to burned discs?

There are some PSP hacks that allow you to play through your computer onto your monitor, but I think the new version of the PSP emulator can handle the game fine.

PPSSPP is a fantastic emulator, try that.
The PSP also has component video out cables. It's windowboxed but if you CFW then you can fill the screen, or use your TV's crop function.

No, you don't run ESR patcher. You plug it into your PC and use a manager or use HDL_DUMB to transfer the games to the HDD, and then you run them using Open PS2 Loader.

Wild Arms and Dark Cloud were cool. Dark Cloud in particular had a really unique atmosphere that I don't think any other game has been quite able to recreate.

You run homebrew applications by using an exploit of some sort. The most useful are FreeMCBoot and FreeHDBoot. The PS2 BIOS just looks on a memory card or a HDD for an updated BIOS and runs it if it's there. FreeMCBoot/FreeHDBoot is a modded BIOS that lets you run other homebrew apps.

This is a bit out of date, but you can write this image to the HDD and your PS2 will boot it. From there you might want to update some of the stuff.
Important homebrew apps for piracy are ESR and OPL.
The PS2's drive will reject all discs that are not pressed (i.e. produced in a factory) or look like a DVD Video. It's forced in hardware, you need a modchip to get around this restriction. Old hacks used a swap trick so that the drive would authenticate the disc, and then you could replace it with a burned one, and the drive controller wouldn't notice the change. Cogswap is a homebrew for this, swapmagic is a standalone bootable disc you can purchase.
Nowadays if you want to play a burned game, you use ESR. You patch the disc so that it looks like a DVD video, burn it, and the drive controller is nonethewiser. Then you run the ESR application and it'll boot the game. FreeMCBoot/FreeHDBoot has automatic ESR disc recognition so it's pretty much plug and play - download or rip your iso, patch it, burn it and it will play.
Open PS2 Loader will play games from a USB drive, an IDE hard drive or an SMB share. It's in semi-active development still. Since you're planning on using FreeHDBoot then OPL will also be convenient for loading games.
