Earthbound's combat is actually just regular turn based JRPG combat with the possibility to lower damage by healing yourself while the numbers are rolling down.
If you call that deep, you are retarded. I know you will just deflect back to Undertale to mock it for kicks, but the bullet hell sections tell their own stories within that single battle and are defensive in nature, allowing you to interract with your opponent even when you are being a pacifist.

Undertale would like you to think that it is cleverly subverting video game tropes, but it applies parody inconsistently while using those same tropes unironically in most of its writing. As a result, the player doesn't have a clear idea of whether characters and plot elements are intended to be mocked or taken seriously, and I suspect that the developer doesn't really know either.
Undertale is a unique and interesting game but it is poorly written.
