Maybe it's just me, but people like how honourable he was before he got corrupted, and enjoy his tragic story.
I love the 'Crestfallen, sad warrior who got fucked up but still tries their hardest unlike the actual Crestfallen Warriors' trope that's common in the Souls games.
The Demon's Souls cover visually appeals to me because of that trope, and characters like Eileen, Lucatiel, Oscar and Maria appeal to me.

It's a mixture of seeing a legend, seeing how everything even the greatest and most valiant of knights will eventually hollow and enforces the fact that your character whilst skilled is not a godslayer or whatever and all you're fighting is the hollowed out shell of the many great beings that preceded you.

I liked him because he was a pretty fast paced boss with cool animation work.
Actually feels good to punish him and dodge his attacks.
Most of the pre-dlc bosses were fairly slow hard hitting with a few fast paced ones but Artorias was the first time From got the aggressive fast paced boss truly right.
