Never played much of daggerfall but i heard stories of people stuck in giant dungeons for weeks real time before they managed to find their ways out.

That really depends on how much time you spend on video game daily. If that's an hour or two, then yeah, you can spend weeks in dungeons.
Last time I played Daggerfall early this year I was stuck in one dungeon for 4 evenings (3-4 hours of gameplay). I couldn't find a quest item and kept exploring, finding new rooms pretty much every time.Then I got fed up, used debug command to teleport to quest item location and it turned out that the quest item bugged out and didn't spawn.
