I want a good third-person medieval game with swordfighting.
Doesn't matter whether their's magic and fantasy in it, I just want the option to cut people and monsters up.

Have you checked out the Dark Souls series yet?
Darksouls 1 require some community fixes and the KB+M controls are fucked up, you need a controller
Darksouls 2 works out of the box and KB+M is quite viable, perhaps even better than a controller

There's no third person option planned but Kingdom Come: Deliverance has the best sword fighting combat I've seen

It is fine with a KB+M but the default bindings aren't very good. You can rebind almost everything though.
There's only one issue, the mouse has an input delay due to double-clicking. They give you the option to disable double clicking but you must reset this setting every time you boot up the game, despite the game saying it's disabled.

Not really, it's just nostalgia seems to matter more than mechanics when playing old games especially early 2000 games and before.
Buy Dark Messiah. It's one of the most consistently celebrated games on /v/. I picked it up two days ago.
I don't always follow what /v/ says, but when people praise a game over a long period, that's probably a good sign of a game being good.
