To be fair, destruction of a planet in any fiction is fucking stupid. Resources aren't unlimited, even on a galactic scale. It'd make more sense to just release some kind of highly virulent, but short lived plague to clear planets of near-human life.

I don't know about that. I mean matter can't be created or destroyed so unless Alderaan had some kind of incredibly valuable biomass, blowing the thing up probably made a much more manageable debris field full of valuable minerals.
