And after about 1-2 months of grinding grammar and doing anki daily. I started reading with about 2,000 words and from there on, I just got better.

It's really not as bad as you think.
From the outside it's insane probably. But once you KNOW all kana. The only obstacle left is kanji. At that point, you practice the radicals that make up the kanji and then move on to kanji itself.
At first it's pretty annoying, but once you seen and know about 10 kanji for example. You move from 10 to 20, 20 to 40, etc 200-400 and next thing you know its natural to see kanji everywhere and as long as you read everyday, its impossible to forget kanji since your spammed with it. (anki makes this possible, also do daily reps)
Once you hit 1000 kanji, kanji becomes not to much of a problem. At 2000, it's almost baby work. It's all about consistency and making sure you see tons of kanji everyday.
