She's easy if you don't get greedy, she's slow as molasses. Also if you cut her tail she turns visible again, if you have a strong weapon you can just go to town on it from the start.

It makes absolutely no difference in the story, gameplay, or otherwise whether you kill her or spare her. It would be neat if she gives you an exclusive item but then you couldn't kill her afterwards, or something like that.
As it stands there's no reason not to kill her, unless you just wanted a specific item from Ariamis and you don't care to fight her. I found her to be a neat boss fight and one of the better ones in the game.

Getting Platinum in DaS2 was a pretty grueling experience, specially because of Lucatiel. Once you stop caring and just overlevel, the game because much, much easier though.
