Jedi Knight 2: Jedi Outcast is the best IMO, it has the authentic feeling of the old trilogy.
Jedi Academy is ok if you like flashy jedi powers and lightsaber moves.
Dark Forces 2 - Jedi Knight (the first in series) also has some pretty interesting maps, but it's quite old so only play it if you are a hardcore nostalgiafag.

Outcast is great, but be forewarned that you don't even get your lightsaber until about six levels in and until then the game is mostly just a Star Wars themed Quake engine FPS. A good one, mind you.

Jedi knight: dark forces 2: GOTY. Made for PC. Perfect mouse control. You can snipe people at a mile away with the starter gun blaster if you aim right. The stormtrooper blaster rifle has a big radius and feels bad to shoot. Saber duels are kinda bad.
Jedi knight: dark forces 2: misteries of the sith expansion. Another GOTY. Stormtrooper rifle has been fixed. You play as a girl, not with kyle, bit of let down but the best gameplay
Jedi knight: Jedi outcast: SHIT single player. Was made for the console, so all gun mechanics are awful and clunky. Boring as hell single player
Jedi knight: jedi academy. Clunky gun controls like the previous one, but the game was designed for you to play with the saber on single player. Finished SP campaign 6 or 7 times, extremely fun. Multiplayer has a differnet engine, where the guns dont suck to aim, feels like an actual PC game.

Jedi academy is one of the best games ever made in my opinon. Every level there is a new mechanic, something new. Saber duels are fucking excellent.
There's also a cheat code for you to unlock any saber style at level 1, for when you replay the game. I like staff best, so on all my reruns I cheated to start with staff.
Mysteries of the sith is also excellent if you like the gun mechanics and older pc games with no hand holding, but the saber itself is pretty simplistic, unlike jedi academy where there are thousands of moves and tricks to learn so you get better at saber duels
The skill ceiling of saber duel in jedi academy is huge, you can get so good at it that even good people won't land 1 hit on you

Dark forces 2 had huge maps, thanks to cheaper older graphics.
Jedi academy has different gimmicks for every level, that are actually fun. Levels on top of trains, levels with sand creatures, every level feels and plays different.
How is Outcast's level design any better?
Academy's the only one I've played and it's one of my all time favourite games

All I can find is that it checks games/applications that you run to see if they are pirated versions and prevents you from using them if so.
That being said, I'm pretty sure you can just disable everything and forcibly remove all of the telemetry garbage, worthless services and apps, and whatever else they bloated it up with.
At least that's what I did and I don't get any outbound stuff. Takes a while to get it that way of course.

SP JO combat is tighter, they spent more time tuning it for one saber and just copypasted it to JA. You wouldn't know any of it if you play only SP though, damn i miss JA duel multiplayer, that thing was very competitive and hard as nails. (choose standart lightsaber). i used to be in a guild years ago and it was an amazing time, we had Events and tournaments with rivaling Clans, i was the best player in our guild. once i had a 30 Minute finale with the Champion of another guild, with both guilds watching and cheering us on, i was sweating bullets. also i had admin right and summoned tauntauns, rancors and spaceships all over the place. great fucking time
