Reason I was asking was because I heard that the "Restored Content" was less restoring cut stuff that was left in the game files and more creating missing content from whole cloth that was of significantly lower quality than the rest of the game.

Listen to this dude. Go with restored content, but avoid the droid planet add-on (M4-78) like the plague. It's an interesting concept, but the execution is lacking and the area it terribly designed.
OP here, I actually have another question. I actually played the first game way back in the day, but I never finished it (And to head off shitposters, I already know the twist). I think I got through the first planet, the jedi planet, and then partway through Tatooine (getting HK-47) before stopping.
Do I _need_ to play the first game through to the end, or is the second game self-contained?

it's mostly self-contained. if you have a decent understanding of the events of the first game you won't be confused at all, but I do think it's hard to play the first game after the second because of how much less content there is in regards to things like character progression.
