I echo what most of the other posts are saying. Ironically, it kind of loses steam by the end of the season becauseit loses some of its cynicism for a more hopeful, sentimental ending. It's similar to the mixed feelings I had when watching Little Miss Sunshine, though I think LMS held its tone slightly better.
I can't watch it without comparing it to King of the Hill or Bojack Horseman. It's not as good as either of those at their prime, but it's pretty decent.

Rick and Morty's pretty funny if you can find it within yourself to tolerate Rick's continual burping and drooling. Surprising plot developments at times.
Steven Universe isn't exactly the second coming of Christ, and I know there's kneejerk reactions around these parts for being tumblr-related and having a generally awful fandom, but it's still a fun show that dances in waters that many other modern shows wouldn't dip with a 20 foot pole with regards to subject matter, and somehow manages to do so somewhat gracefully without shitting all over itself. Not ever episode is a masterpiece but the ones that are good ARE good. The side characters get a surprising amount of screen time and development, lending to some decent variety in the show. Character growth IS a thing, and I personally feel that the main character becomes way better as time goes on.
Avatar: The Last Airbender has some really good character development on all fronts, too, as well as, well, I suppose "overthrow the evil despot" isn't exactly an original plot goal but the path it travels to get there is pretty good. I will forever consider it a classic.
Astro Fighter Sunred is pretty great. I really love the villain organization and the 'hero' both. They work off each other so well.
Log Horizon's pretty good, although the second season suffers a little from having too much of the kids, although it's hard to dislike RUNDERU HOUSU CODO.
Most things LOUPAWN ZA SUUUUUUURD! are pretty good.
For a shonen, Fairy Tail's pretty alright.
One Punch Man is a solid anime on its own, but I very strongly suggest that you use it as a highlight reel to the first part of the manga and webcomic, as a supplement to those.
If you're a food guy, Toriko is a fucking mouthwatering show.
I admit that the animation can be extremely awkward or uncanny, but ReBoot, although CGI, is a western thing that I feel everyone needs to experience at some point. Ditto with Beast Wars and Shadow Raiders/War Planets.
F is for Family is a show that grew on me. I don't think I really laughed out loud at anything in particular, except for the part where Bill is hiding under the bed and his parents have make up sex after yelling at each other and he sees it from a disgusting angle, but it was amusing and charming and I was surprised there was an overarching plot and characters that developed throughout.

It took me several tries to get into the show. I eventually got used to it because it kept coming on the weekly stream I visit and the other guys really liked it, and I'm nothing if not stubborn so I kept giving it tries until I finally caught on to what was so good about the show, which Rick's behaviours seemed insignificant next to, or perhaps even somehow improved the humour.

The creators have gone on record (on some podcast or something) that they very deliberately made season 1 of Bojack with 2 different halves and tones in mind. They knew they were airing on Netflix where people sit down and watch everything at once, so they decided to do a 'lol so wacky' first half and an introspective Mission Hill style second half. That's where all the 'wait till episode _' comes from.

In X/Y, Serena's playing the role of the newbie trainer that needs to look shit up in the dex for the younger audience who's not familiar with all the Pokémon, and questioning some of Ash's actions in battle so Clemont can explain the deeper strategies to her, which makes Ash look actually experienced and competent. In Best Wishes, both of Ash's companions were seasoned veterans, so Ash had to play the role of the idiot that doesn't know shit and needs everything spelled out to him.
