if you're looking for old school sprites and shit you need to go play IV (story), V (gameplay), or VI (people like this one even if I don't that much). If you're looking for more modern games you should look into VII (the popular one), IX (my favorite but a bit of a pain in the ass the access), or X (easy to understand battle system and pretty good story)

7 is typically considered the "go to" starting point, but 6 works as well if you want a 2D one. 10 is excellent as well if you want one with more modern graphics.

I'd like to see 8 remade next, the world would be amazing to see in current gen graphics. Just imagine Balamb garden or Fisherman's Horizon redone in HD. I've seen how they remade the Rinoa/Squall dance scene for ps2 and that made me want to see a remake even more.

I can guarantee none of these would be good as remakes though because Nobuo Uematsu's incredible work on those games in particular cannot be emulated.
