Your dad will likely like a racing game if he's anything like any other dad. Dads like racing games for some reason. Gran Turismo would be a good choice or Forza, just because of all the car customization and such.
What console? I'm not big into sports or racing, but Burnout Revenge was really fun back in the day when I was playing it. Burnout Paradise from 2008 is the latest.

That's not true, my father back in the 90s would play video games. Hell I remember one time when I was 19 hanging out with some friends he got drunk as hell one night and came in to play Madden with us randomly, never even touched Madden before either. Good times.
