Because using both at once allows me to switch out whenever I encounter enemies with varying weaknesses. I can run through chalice dungeons where the mobs are weak to fire, but the boss is weak to bolt. This way I never have to worry about my dame output. I'm also so used to the delay with the holy Blade animations that I can perfectly time charged hits.
