I will admit that FPS as it stands doesn't let you see yourself very well. With the exception of Arma. This is a room for improvement no doubt. Fuckin AAA and indie devs keep dropping the ball on that one.

This just leads to poorly designed game UI. It shouldn't break any immersion to see information on the screen that wouldnt actually be seen by the character. You don't need that to feel as if you are in the game. It just requires an actual good game.
Also the majority of decent, immersive games have had a traditional user interface. Two examples I recently played: Dark Souls and Legend of Grimrock.

i personally prefer first person, it makes a game much more immersive, however. some games work well in the third person, such as 3d mario.
