Banjo Dreamie is definitely the most solid one so far. The editor just is too recent but god tier shit to be pumped out as easily, plus few people even know that "Banjo's Backpack" (the editor) even exists, unlike Mario 64 which has a vibrant rom hacking scene.

Nah Tooie is a completely different ball game. Even the Kazooie one is fairly limited at the moment. They intend to do a Tooie one eventually though, they've got the makings of a DK64 one.

As someone who considers the games some of his favourites and played both on release on the N64, no. The 360 version are 60 FPS, there is no fade out of objects, textures are HD. A few silly design decisions in the ports and useless gimmicks like "Stop n' Swop" don't detract from them being amazing ports. The N64 version of Banjo Tooie is a virtually unplayable 23 FPS 240p compared to 60 FPS 1080p of the ports.
